Walnut Banana Shortbread Cookies

Here’s a tasty treat getting us in the mood of autumn. Shortbread cookies are an anytime favourite of all. Whether you can want to munch along with a cup of tea, give your kids some treats or indulge in a crispy snack, walnut and banana flavoured shortbread cookies is the way to go.

Cooking Time – 30 minutes

Ingredients: 1 Cup Coconut Oil or Melted Butter 1 Ripe Banana Mashed 3/4 Cup Brown Sugar or Granulated Sugar 2 and a half cups Almond Flour (Almonds blended to a course powder) or 2 and a half cups All-Purpose Flour 1/4 Cup Walnuts Toasted and Coarsely Grounded 1/4 teaspoon Cardamom Powder 1 Teaspoon Vanilla Essence Pinch of Salt

Instructions: 1. Combine the oil or butter, sugar and banana. Mix them together in a bowl 2. Add vanilla essence, cardamom powder and a pinch of salt. Give it a mix 3. Add in the flour and blend it all together 4. Finally, add the grounded walnuts and mix them all together to form a soft dough 5. Transfer to a large piece of parchment paper and roll it tightly into a log that is two inches wide. Freeze for ten to 15 minutes to harden 6. Preheat oven to 350 degrees Fahrenheit or 175 degrees Celsius 7. Take the log, unroll the paper and slice the cookies to small discs with a knife. Test the dough – If it's too hard, let it rest for few minutes or if too soft you might need to freeze it 8. Place the discs on an ungreased baking sheet 9. Bake for 18 to 22 minutes or until lightly golden brown 10. Allow to cool and serve the tasty treats
